dulce de membrillo (quince paste).

Late October brings an interesting addition to stands heaped with squash and apples at the Greenmarkets in New York: a  strange green fruit, seemingly under-ripened,  knobby and oddly leathery, with just the faintest unidentifiable smell of sweetness.
